Turkish Delight


Ingredients


4 cups sugar
1 1/2cups corn flour
1 tea spn cream of tata
4 1/4 cup water
1 tsp lime juice
1 1/2 tbl spn rose water
1 cup icing sugar
 red food coloring


Method


Combine sugar, 1 1/2 cup water and lime juice in a thick bottom pan stir over low fire until sugar dissolves.Bring to the boil and soft bubble stage. Remove from heat.

Separately mix corn flour, cream of tata and 1 cup water until it becomes smooth.In another thick based pan boil 2 cups water and stir into corn flour mixture, stir constantly until mixture thickens, use a balloon whisk if lumps are formed.

Pour hot sugar syrup into corn flour mixture keep stirring. bring to the boil. now reduce the heat and stir occasionally with a wooden spoon and cook until mixture turn to golden color.


Stir rose water to taste and few drops of red food coloring, now remove from heat.Pour into an oil cake tin and leave for 12 hours to set.


Put icing sugar and 1/4 cup corn flour in a dish.Cut into squares with an oil knife and mix in icing sugar mixture.
