Egg Rolls


This is an easy snack made usually during Ramadan........very easy to make and tasty too……these are thin pancakes filled with a spicy filling.......


Ingredients


250 g flour

3 eggs
salt
water


Method



Add all these ingredients and make a creamy batter. Then make a filling with beef or chicken.

Then heat a nonstick pan and pour a spoonful of batter into the pan and fry both sides until it become golden and firm.

Then remove to a plate and place 2tbls of filling and roll it.Dip the roll in plain flour and deep fry.
SERVE HOT!!!!!!!!!

Milk Toffee


Milk Toffee is a Sri Lankan treat. It's delicious with raisins and cashews. Great with a cup of tea or coffee.


Ingredients


1 can of 300 ml Condensed Milk
300 g sugar
Vanilla essence
Rose essence and
25g cashew (finely chopped)
2 table spoons of butter
2 table spoons of water


Method


Butter a flat tray and keep it on a side.

Add the sugar to a large saucepan on stove top. Add 2 table spoons of water and stir well for 3-4 minutes then add the condensed milk. Keep stirring for 15 minutes.

While adding the cashew, half a tea spoon of Vanilla essence and 2-4 drops of rose essence. When the mixture starts to get thick, add 1 tbsp butter and stir up to about 5 minutes.

Take off stove top and pour the thick mixture on to the tray we set aside earlier. Spread and flatten using a spatula or the back of a spoon.

Leave until hardened and cut in to small pieces of your choice.

Caramel Iced Coffee



Ingredients


1/4 cup boiling water
2 tbls instant coffee (u can reduce the coffee amount if u think it's too much - I like it a bit strong)
2 tbls sugar (according to ur taste)
10 ice cubes
1/3 cup milk

Method

Mix first 3 ingredients together to make a syrup, put into blender. Add ice cubes and blend until slushy. Add cream and blend until frothy.

Serve with Whip Cream and Drizzle with Caramel syrup

Jaggery Pudding

Ingredients


3 cup Coconut milk [first extract]
3 cup Coconut milk [second extract]
350 g Jaggery
3 tbls gelatin
1/2 tsp cardamom

Method

Mix the coconut milk and jaggery together and bring to a boil.Stir continuously until jaggery is dissolved. Dissolve the gelatin in hot water and add it to the milk mixture and mix well.

2 table spoon milk powder
1 tea spoon yeast
1 egg
Icing sugar
Salt

Method


In a bowl add all the dry ingredients and mix well. Then add enough water and make a soft dough.

Ingredients

250g mutton or beef with bones [cut in to medium sized pieces]
1tsp ginger and garlic paste
1 medium sized onion chopped
1 medium sized tomato chopped
1 tsp red Chile powder
1/2 tsp pepper
1/2 tsp cumin powder
Salt to taste
2 cloves
2 cardamom
1/2 cup cooking oats
